WINES
CABERNET SAUVIGNON
In contrast to the rieslings which are remarkably constant from one year to the next, there is some variation with cabernet sauvignon, reflecting the variation in the season. The aim is to achieve a wine of 13.5% alcohol, although this may not be possible in cooler slow-ripening seasons.
The consistent theme is of sweet berry flavours, and an avoidance of oak dominance.
This wine contains approximately 10% Merlot. The 1994 Cabernet Sauvignon was judged the best of the variety in the Winewise small winemaker awards in 1996.
Maturation potential is generally 5 to 8 years.
"The Gallery Series" is the label concept of the Riesling and Cabernet Sauvignon wines. "The Gallery Series" commenced with the release of the1988 Cabernet Sauvignon, when local artist, Murray Edwards, was invited to produce an impression piece of the vineyard. Each year a different artist has been selected, and in 1993 the concept was extended to include the riesling, so that there are now two artworks now produced each year.
The label of the 1996 "Gallery Series" Cabernet Sauvignon, designed by Sabine Deisen, was judged the world's best colour-letterpress label in the 1998 Finat International Label Awards.

2002 Cabernet Sauvignon
(Primarily US and UK markets. Scarcely available in Australia)
The artwork for this wine was done by Christian Vocke of Undalya, (near Auburn), and frivolously suggests that the making of the wine is more fun than hard work.
Colour: Dark crimson
Aroma: Fruit-driven, stewed plum aromas, but backed up by chocolate and cedary tones.
Palate: Full, with sweet mouth filling flavours, of cherries and cinnamon. It is a very big wine. and finishes with an agreeable chalky mouth feel, balanced by a clean acidity, and a lively lingering persistence.

2001 Cabernet Sauvignon
(Tasting notes based on stelvin-closed samples).
Colour: Deep, red ruby in colour
Aroma: Dusty nose of blackberries and stewed plums complexed by spicy French oak
Palate: Full-bodied palate is dominated by ripe berries, chocolate and cloves. The flavours are rich and concentrated with complementary chewy tannins. Good natural acidity, a hallmark of the 2001 vintage helps to keep the palate tight and fresh with assured longevity.
2000 Cabernet Sauvignon
Tasting notes have been based on the bottles closed with stelvin caps. Our tasting of those closed with corks have shown some variability of character, that vary from some that are no different to the stelvin samples, to others that we can only describe "as having the volume turned down from 10 to 7".
Colour: Medium crimson with purple on the edges.
Aroma: Stewed prunes, cinnamon, and cloves
Palate: Fresh plumy flavours, with a touch of spices, and the subtle balancing of French Oak. A generous mouth-filling wine with good acidity and a soft tannic finish.
