WINES
Hand Plunge Shiraz

This is a very special wine that is presently made in a limited quantity. We start with our very best patch of shiraz, which is harvested quite ripe, fermented in an open fermenter, with frequent working of the cap with a small hand-plunger (hence the name), some extended skin contact, then maturation new American oak barriques for 24 months. It is neither fined nor filtered prior to bottling
The palate displays a union of sweet berries and spice with underlying regional eucalypt and mint aromas enhanced by a marriage with new American oak. Chalky tannins give a pleasing mouthfeel to this ripe, concentrated Clare Valley Shiraz.
